A MODERN APPROACH TO BAIJIU

Baijiu, a cornerstone of Chinese culture, embodies tradition, history and status. From our name, 白 – Bai - meaning white – represents the purity of this spirit that shares the same first character with the word baijiu.

The idea of 8 both exemplifies wholeness and the dynamic and static state of all natural phenomena – a fundamental Chinese philosophy of nature.

Water is an alcohol's lifeblood

Our distillery – nestled on the Ou River in Zhejiang - draws its water from this natural water source, resulting in a light-aroma baijiu that is aromatic and piquant.

Yeast is an alcohol's backbone

Our baijiu is fermented for two-months using a closely guarded big qu (大曲) fermentation agent recipe. 白8 is distilled in a traditional stainless steel still and aged for 3 years.

Our baijiu uses premium sorghum from Shandong province. We also incorporate a buckwheat baijiu into our final blend, a first for the category.

FLAVOUR PROFILE

白8 (pronounced: bai-ba) is the first to take this infusion of a finished baijiu product, re-distill and then blend it, to create a baijiu that is complex and well-balanced, without compromising on the flavours that make baijiu truly unique.

Hawthorn

Long a symbol of love and devotion, hawthorn has been enjoyed for centuries as a sugar-coated treat called ‘tanghulu’ during the Chinese spring festival. The complex fruit flavour of hawthorn brings sweetness with a slight bitter almond taste to our baijiu.

Sichuan Pepper

Our Sichuan peppers are sustainably grown and harvested outside of Chengdu, Sichuan. Sichuan Pepper contains flavour compounds similar to those in citrus plants, therefore, not only does the Sichuan pepper bring spice and heat to our baijiu, but also other interesting citrus elements.

Honey

Our honey is a mixed flower honey, from a farm producer in Zhejiang, close to where our distillery is located. Honey is an important ingredient that helps balance the astringent citrus flavours of our Buddha’s hand and round off the earthiness of the green tea.

Shiitake Mushroom

Inspired by the umami notes found in strong and sauce aroma baijius, shiitake mushrooms bring a similar quality to our baijiu creating a striking balance with our earthy sorghum and buckwheat baijiu blend.

Coriander Seed

A favourite botanical among distillers, our coriander seeds come directly from Qujing county in Yunnan province of China. Coriander seeds contain complex citrus elements which compliment both the green tea and Buddha's hand in our baijiu.

Chinese Date

Chinese dates have grown in China for thousands of years. The Chinese dates used in our baijiu are dried which enhances its flavour, transforming it from a sweet apple flavoured fruit to a rich honeyed, prune like taste.

Green Tea

We incorporate a whole leaf green tea from Shaoxing in Zhejiang province, one of China’s most famous tea growing regions. The aroma of the whole leaf green tea brings fresh, grassy and floral tones to our baijiu.

Buddha's Hand

An ancient citrus plant which contains no pulp or juice, Buddha’s hand has extremely fragrant skin is used to bring sweeter more rounded citrus flavours to our baijiu.
